Peter's Mango Pineapple Salsa
Peter's Favorite Version:
2 Cups fresh pineapple -- peeled and chopped
2 Cups fresh mango -- peeled and chopped
1 Cup fresh red bell pepper -- chopped
2/3 Cup fresh kiwi fruit -- peeled and chopped
NO red onions -- finely chopped
2 heaping tablespoons fresh cilantro -- finely chopped
2 heaping tablespoons fresh mint -- finely chopped
2 ounces fresh lime juice
1 rounded Teaspoon fresh serrano chili with seeds -- minced
6 grinds of sea salt.
Dash of Fume Blanc wine
Spicy Version:
2 Cups pineapple -- peeled and chopped
2 Cups mango -- peeled and chopped
2 Cups yellow or red bell pepper -- chopped
2/3 Cups kiwi fruit -- peeled and chopped
1 rounded Tablespoonful red onion -- finely chopped
2 heaping tablespoons fresh cilantro -- finely chopped
2 heaping tablespoons fresh mint -- finely chopped
2 ounces fresh lime juice
1 very heaping tablespoonful serrano chili with seeds -- minced
4 roasted and ground dried chiltepin chiles
2 level teaspoons fresh ground cumin
2 level teaspoons fresh ground mustard
6 grinds of sea salt.
1.5 oz. Fume Blanc wine
1 oz Plain Star Brand Rice Vinegar
A couple of drips of sweat (Just Kidding)
The Produce:
Pineapples (We like em like number 5) (But don't eat too much of this stuff)
Mangoes (This kind, not too soft)
Kiwi Fruit (Barely Soft)
Red Bell Pepper (Pick out a nice dark red one, that is not soft or wrinkled)
Red Onions (A little bit goes a long way)
Cilantro
Mint
Lime
Serrano Chile
Sea Salt (Not quite this much)
Fume Blanc Wine (Just a dash)
